I haven't had any problems running from an external HDD but how do you do that?

I know what you're thinking, "oh that's loads of resource" and you're right but on this I run Proxmox 8.2.4, and then in Proxmox I have 5 Windows VMs running, plus Icecast. I installed MariaDB on another Proxmox server running local network and point all the VMs at that. Anyway, each VM is..

2x vCPUs
2GB RAM
64GB HDD

I created a base Windows 10 image in Proxmox with 4 cpus and 8GB RAM, installed all the drivers, updates, VNC, VBCable, Butt, copied installers and so on but I did NOT install RDJ. I gave the base build more resources so it didn't take forever to do things and reduced the resources before I then Sysprep'd the VM, shut it down and made it a template.

All media is stored on my NAS. When I want to start a new station I clone the template, fire it up and go through the OOBE, install RDJ, connect to the network MariaDB server and Media share and away we go. Because it is a Linked Clone, it only refers back to the Template Hard drive so each VM doesn't take up 64GB each, it's just the delta of data difference. Icecast is installed in an LXC and is chugging along quite nicely.

Each RDJ VM uses approx 14-22% of 2 vCPUs and between 58-65% of 2GB RAM. The system itself, running 5 instances of RDJ, each in a VM as above, is using approx 20-25% of 8 CPUs and approx 75% RAM. I reckon I could easily squeeze out 1 more RDJ VM on this box.

Oh, each Butt encode is 192 to the Icecast LXC, which is 2 vCPUs, 512MB RAM and currently using 0.5% CPU and 43MB of RAM, with 6 Streams going to it (I have my first ever RDJ install on a different server also going to this Icecast so 6 in total).
